Due to the north-west aspect and shade from the intense sun given by the Massif des Maures mountains, Grenache and Syrah ripen slowly before being harvested in the cooler hours of the morning. For Rebelle, Pierre Duffort opted for the the slower rosé de saignée (bleeding) method, with fermentation by naturally occurring yeasts only. Appropriately for this traditional cuvée, the bottle harks back to the style and shape used by the estate in the 1950s.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003cdiv class=\"half makefullwidth\"\u003e\n\u003cp class=\"title\"\u003eTasting notes\u003c\/p\u003e\n\u003cp\u003eA serious and full-bodied style of rosé, Cuvée Rebelle has a lovely, expressive nose of wild garrigue herbs and flowers. The bright palate is savoury, complex and elegantly vinous.\u003c\/p\u003e\n\u003cp class=\"title\"\u003eFood match\u003c\/p\u003e\n\u003cp\u003eCuvée Rebelle from Domaine de Rimauresq is pretty and elegant, working both as an apéritif and with food. Being more savoury in style it is definitely a wine for food.
